Blueberries!

One of our side stops on our way up Hwy. 51 to Brighton, TN was a stop to pick Blueberries in Kentwood, LA (birthplace of Britney Spears!) We were driving along and all of a sudden saw a small sign "Pick Your Own Blueberries - $6 a Gallon!" We were in no hurry so we stopped!  I mean it's not everyday that you have time to just wander around picking Blueberries?!

I was amazed, the elderly fellow who ran the place had buckets and bags already laid out, and a simple jar for us to put our money in...all on our honor...I Love the South!


I'd never picked Blueberries before...I guess I assumed they would be like Picking Blackberries, but Blueberries grow on bushes, and at this farm the bushes were loaded down with berries! We were able to pick a gallon in no time (even though we ate every other hand full!), and almost incident free...I did step on a Fire Ant Hill! My feet were practically eaten (I still have 30? welts on my feet!)!


Now that I had the Blueberries...I clearly needed to cook something with them, so I choose a Lemony Blueberry Pound Cake for our Family's Fourth of July Celebration!

Ingredients
4 Sticks of Unsalted Butter
3 Cups Sugar
6 Eggs
4 Cups All Purpose Flour
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
1 Cup Milk
2 Teaspoon Lemon Extract
1/4 Cup Freshly Squeezed Lemon Juice (Juice of 1 Lemon)
1 Teaspoon Freshly Grated Lemon Zest (I just used the same Lemon that I had juiced...)
2 Cups of Fresh Blueberries (Picked Roadside Optional)

Directions
- In an Electric Mixer, Cream the softened Butter and Sugar together.
- Add the Eggs one at a time, mixing well between each.
- In a separate bowl sift together Flour, Baking Powder and Salt.
- In another bowl combine the Milk, Lemon Extract, Lemon Juice, and Lemon Zest.
- Add the Dry and Wet ingredients alternately.
- Dust the fresh Blueberries in some extra Flour and Fold into the Batter. (This is Super important because otherwise the Berries will stick to the pan)
- Pour into Greased and Floured 10" Bundt Pan and Bake for 60-70 minutes at 350 degrees.


The Pound Cake tasted fantastic! Not only at the Fourth of July Party, but also warmed up the next morning, with a little butter on top for Breakfast! It's looks? Not so great.  It wasn't until after my cake was stuck to the inside the bundt pan that I was informed that Blueberries have alot of Sugar in them...and apparently like glue themselves to pans?  Well you live and you learn...Next time, I'll coat my Blueberries in Flour first!
