Zucchini!

It has been a slow transition to get Zach to realize he likes food other than Beef and Potatoes...to get him to embrace Veggies!


I got another Recipe out of Martha Stewart Everyday Food, this time for Stuffed Zucchini with Tomatoes and Mozzarella!


Ingredients
- 2 Zucchini
- 1 Can Diced tomato
- 2 tablespoons chopped Fresh Oregano
- 1 tablespoon White Vinegar
- Salt and Pepper to taste
- 1 "bulb" Fresh Mozzarella


Directions
- Drain tomatoes and mix with chopped fresh Oregano, Salt and Pepper in a small bowl.
- Slice Zucchini in half length wise and scoop the seeded area out on the middle with a spoon to create a small groove in each slice.


- Top Zucchini with Tomato Mixture and Bake at 400 degrees for 20 minutes.

- Thinly slice bulb of Mozzarella and place on top of Zucchini.

- Broil the Mozzarella topped Zucchini for 5 minutes. (The picture shows the cheese browning...but mine never did).

I loved this recipe! I served it with some simple baked chicken, and it was a great side dish, but could also have been a main course with some pasta too! Definitely a repeat recipe!
