This weekend I had a little free time and I finally got a chance to cook! And I made a fantastic Pork Tenderloin dish! Pork Tenderloin was a standby for my Mother when I was kid, because it was pretty hard to screw up...but I definitely think I improved on our standard!
Spicy Apple Pork Tenderloin
Ingredients
- 1 Tablespoon Flour
- 1 Teaspoon Salt
- 2 Teaspoons Dry Mustard
- 1 Teaspoon Red Pepper
- 1 Teaspoon Black Pepper
- 1 1/2 Pound Pork Tenderloin
- 2 Cups Unsweetened Applesauce
- 1/2 Cup Brown Sugar
- 2 Teaspoons Cinnamon
- 1 Teaspoon Powdered Clove
Directions
- Mix together Flour, Salt, Mustard and Peppers and coat pork.
- Heat oven to 325 degrees and cook pork for 15 minutes
- Mix together Applesauce, Sugar, Cinnamon and Clove.
- Pour Applesauce Mixture over Pork and cook for 30 more minutes occasionally basting.
I served our Pork with some store bought biscuits and mashed potatoes and it was a pretty top notch meal! The pork was sweet and appley but then had this spicy undertone from the pepper rub. I really liked this dish - a definite repeat and it heated up well, we just had it for dinner tonight again!
