Sweet and Salty Shortbread

As the Holidays get closer thoughts of sugar plums are dancing in my mind, and tonight my cravings for shortbread cookies did.  We went to the grocery earlier and I withheld from getting one of those tins of little danish cookies (Zach and I both have a weak spot for those...) but my cravings returned.


I found a great recipe for Shortbread cookies and conveniently I had all the ingredients in the apartment already!


Ingredients
- 1 1/4 Cups of Butter (2 1/2 sticks cut into little slices)
- 2 Cups of All Purpose Flour
- 1/2 Cup Granulated Sugar
- 1/4 Teaspoon Salt
- 1/8 cup Cornstarch


Directions
- Mix Four, Butter, Sugar and Salt on low speed until blended, then increase to medium and mix until dough "comes together" ie. looks like cookie dough...
- Press Dough Evenly into a 9inch round cake pan.
- Sprinkle with Coarse Sugar (I only had colored but I thought that made it festive!) I also really like mixing sweet and salty so I sprinkled it with Coarse Salt too!


- Bake at 325 degrees for 30-40 minutes until it becomes lightly browned.
- "Cut" the Shortbread while it is still warm with a fork....now I thought this was odd, but a knife kinda tore it up, scoring the wedges by poking a fork in it actually worked better!


Eat and Enjoy! I must say it was pretty good and I was amazed at how flavorful it was with even with as simple as the recipe was! I'm going to have to try this for a holiday function a definite repeat!
